Another update to EDS lunches!
The lunchroom committee began meeting in May 2013 to look at making our menu selection healthier and more appealing to students, as a component of the EDS wellness policy. Initial objectives were to make small, healthy changes in the menu while staying within our budget. Some notable changes were a decrease in dessert offerings, more fresh fruit, sweet potatoes, breakfast for lunch, and a decrease in fried, processed foods such as hot dogs and corn dogs. Additionally, students have enjoyed Arby’s roast beef sandwiches on “Take Out Tuesdays.”
The focus for 2014 will be the salad bar. Themed days have been established and are as follows:
Monday – Sandwich/Salad Bar – 2 sandwich meats, 2 breads, (wheat, pumpernickel, or pita pocket), lettuce, tomato, cheese slice, pickle, chips
Tuesday -“Take Out Tuesday” or Salad Bar
Wednesday – Soup and Salad
Thursday – Baked Potato and Salad
Friday – Taco/Nacho Bar and Salad – nacho chips, taco meat, cheese sauce, soft tortilia wrap, shredded cheese, lettuce, tomato, salsa, sour cream
The committee welcomes any suggestions for the salad bar or new menu ideas. Kudos to the EDS lunchroom staff, Katie and Alisa Hicks for making these changes happen!

I love the addition of more fruits and vegetables on the lunch menu! I recently saw a recipe for carrot fries ( tossed in olive oil and baked) and I thought Mrs. Katie might try it.
