Summer at EDS Recap: Food and Farm Week

Campers have been having a wonderful time at Summer at EDS. They have spent time playing sports, creating wonderful works of art, exploring the world of technology, and enjoying a variety of enrichments. During the week of July 11-15, campers had the opportunity to learn about gardening and produce at our Flowing Wells Campus. Every camper, including our Threes and Pre-K campers, went out to the Flowing Wells Campus each day to work on gardening and learn about farming and plants with Boardman Chair of Science and Sustainability, Joe Kirstein.

On Friday, as a culminating event to our wonderful week, we invited parents to join us for a snack at our Flowing Wells Campus. We dined on vegetables that were planted and harvested in our gardens, and had a wonderful morning sharing the Flowing Wells Campus with parents and guests. Our youngest campers, threes and PK, worked hard to make pesto from scratch. The kindergarten and first grade campers made tomato and cucumber salad with a vinaigrette dressing. Our oldest campers worked on slicing and shredding squash to make squash fritters and fried squash.
